Owner and head baker Francois Galand from Normandy’s picturesque Honfluer region has accumulated an impressive resume with over 30 years experience here in Sydney.  With a few years working at La Gerbe d’Or in Paddington Francois also established and ran the popular Dinky Di Pies in Rose Bay with two other chefs for thirteen years and is as sweet and lovely as the gateax and pastries he makes by hand and from scratch.  Francois was raised in Normandy and his grandfather, also a baker and owner of a patisserie, was exposed to the art of baking from a very young age which inspired him to become a patissier/baker.  Passionate about the produce from his region of France, Francois continues to use the best butter from Normandy in his pastries and croissants which are simply divine and is dedicated to making everything the authentic and traditional way.  Francois’ bakery offers a wonderful selection of artisan bread, baguettes, delicious pastries, tarts, plump and fabulously flaky croissants, heavenly quiches and pies, classic and modern French cakes and some gluten free options for the diet conscious patrons.  The bread and baguettes, all made from organic flour, are especially popular and almost all sold out the few times that I have popped in there. The bakery is also a café where you can sit down and enjoy a scrumptious breakfast or lunch or indulge in a selection of petite gateaux (bite size cakes) with a quality tea, coffee or hot chocolate.  Sandwiches are made on order using fresh ingredients and the bakeries crusty artisan bread rolls or enjoy a flaky sausage roll or pie or melt in your mouth quiche.  The quiches taste as amazing as they look and are available in family size portions to take away and enjoy at home.  You will be spoilt for choice by the cakes on offer that are all so beautifully presented and are made to order for special occasions and events.  The bakery caters for parties, weddings or any function large or small and items from the bakery can be ordered online and delivered daily if you so desire which is very convenient indeed when you’re time poor but craving something French.
